Thank you everyone who entered! Don't forget you have a chance to win a FREE half body laser hair removal package from Spa Trouve at their open house on Jan 30th!

In the meantime I wanted to share something I don't usually do here, and that is a recipe. Now, the only reason that I am sharing this, is that I have fallen madly in love with this easy peasy meal. I found it on Pinterest and I thank my lucky stars I did. I eat it probably once a week, for serious. So I felt like I would share this amazing creation with you c/o of http://www.twopeasandtheirpod.com.

First of all, the things I love about this meal is it is TOTALLY customizable. I am a sucker for avocado. I am a sucker for lime AND cilantro, and I really am a sucker for mozzarella. Put them all together and you got my full attention. When I first tried out this recipe, it noted that they make it on pita bread, but to dismay, clean out of pita bread at every store I went to. So I bought little mini pizza crusts, which actually work just as well.

See that is what I love. You can't go wrong with this one. I have tried it on pizza crust, pita bread, and even my new fav, naan bread. All are amazing. You can even tone down the spiciness of the cilantro sauce by nixing the jalapeño. Done that a couple times due to the lack thereof of jalapeños in my house, and it honestly doesn't affect the amazing flavor at all. Plus if you add a little less mozzarella and use whole wheat pita bread, you're looking at a pretty healthy choice here people.

To be honest, when I made it today I didn't even add the stupid green onion (I think I have only added them once, they don't do anything) and still it turns out amazing. A little different each time, but glorious none the less. Try this baby out guys. You're welcome :)

Avocado Pita Pizza

ingredients:
To make the Cilantro Sauce:

1 cup chopped fresh cilantro 1 large garlic clove, minced 1 tablespoon chopped green onion 1 tablespoon minced and seeded jalapeño pepper 1 tablespoon fresh lime juice 1/4 cup extra-virgin olive oil Salt and pepper, to taste

For the pizza:

2 pieces whole wheat pita bread 1/2 cup shredded mozzarella cheese 1 large avocado, peeled, pitted, and sliced

directions:
1. Preheat the oven to 400 degrees F.

2. To make the cilantro sauce: In the bowl of a food processor or a blender, combine cilantro, garlic, jalapeño, green onion, and lime juice. Pulse until combined and roughly chopped. With the motor running, slowly pour in the olive oil. Blend until smooth. Season with salt and pepper. (I just used my Magic bullet and threw it in there at once, it's ok, it's ok:)

3. Divide the sauce and spread evenly on pita bread pieces. Top with shredded mozzarella cheese. Place pita pizzas on a large baking sheet and bake for 8-10 minutes, or until cheese is melted. Remove from the oven. Top pizzas with avocado slices. Sprinkle with salt. Cut into pieces and serve warm.
